How I make my sweet potato bread
This unique sweet potato bread was one of Nana’s favorites. It is super delicious and filling. I am sure if you gave it a try, it would become your favorite.

Ingredients:
- 1/2 cup vegetable oil
- 1 1/4 cups sugar
- Two eggs
- One cup cold mashed sweet potato (two medium-size potatoes)
- 1 3/4 cups all-purpose flour
- 1 1/4 teaspoons nutmeg
- One teaspoon cinnamon powder
- One teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup water
- one cup raisins or chopped nuts
- 1 1/2 teaspoons vanilla extract
Directions:
Heat oven to 375 degrees Fahrenheit. Grease your loaf pan. Combine sugar and butter. Use an electric mixer at low speed, beat mixture until blended. Increase speed to medium. Beat well. Add eggs one at a time. Then add the sweet potato, and vanilla.
Combine flour, nutmeg, cinnamon, baking soda, and salt. Add dry ingredients alternately with water to the creamed mixture. Beat well. Now you may add your raisins and or chopped nuts. Pour batter into your prepared pan. Bake for 375 degrees Fahrenheit for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes. Then transfer to a cooling rack.
