Ingredients:
1/2 cup butter softened
One cup of sugar (granulated or light brown)
Two eggs
1/4 teaspoon vanilla
1 1/4 cups all-purpose flour
One teaspoon baking soda
One teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups of chopped peeled apples
1/2 cup chopped walnuts (optional)
Steps:
- Heat your oven to 350°F. Then line the bottom of a 9-inch round cake pan with parchment paper. Or spray the bottom of the pan with a cooking spray,
- Using a large bowl, beat butter and sugar with electric mixer on medium speed until light and fluffy. Beat in the eggs, one at a time. Then stir in vanilla, flour, baking soda, cinnamon, and salt. Stir in apples and walnuts—spoon batter into pan.
- Bake batter for about 40 to 45 minutes or until a toothpick inserted in its center comes out dry. Cool for 10 minutes. Then remove from pan to cooling rack. Cool for 10 more minutes. Serve warm with ice cream.
