Mayo chocolate cake with walnut topping


Ingredients:

  • Two cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder 
  • One teaspoon baking powder
  • One teaspoon baking soda
  • 1/4 teaspoon salt
  • Three large eggs, at room temperature
  • 1 2/3 cups granulated white sugar
  • 1 1/2 teaspoons pure vanilla extract
  • One cup mayonnaise (full fat or light mayonnaise)
  • 1 1/3 cups of water or coffee, at room temperature
  • Topping:
  • 8 ounces semisweet chocolate bar, cut into small pieces
  • 3/4 cup heavy whipping cream
  • 1/2 cup walnuts
  • 1/2 coconut flakes
  • One tablespoon butter, cut into small piece

Direction:

Preheat your oven to 350 degrees F (180 degrees C). Butter, or spray with a non-stick vegetable spray, a 9.5 x 3-inch baking pan. Line the bottom of the pan with parchment paper.
In a medium bowl, whisk flour, cocoa powder, baking powder, baking soda, and salt-set aside.
Using an electric stand mixer fitted with the paddle attachment (or a hand mixer), beat the eggs with the sugar and vanilla extract, at high speed, until light and fluffy (this should take about three minutes). Next, reduce your mixer speed to medium and mix in the mayo until just combined. Scrape down the sides and bottom of your bowl as needed. Now, set the mixer at low speed, and add the flour mixture in 1/3 portion. Then add the coffee (or apple cider) (in half part).
Pour the batter into the pan. Smooth out the top with the back of a spoon or offset spatula. Bake batter for 30 – 35 minutes, or until a toothpick inserted into the cake center comes out clean. At this point, the cake should start pulling away from the sides of the pan. Place the cake on a wire rack and let cool completely before frosting.

Topping:

  1. Place the chopped chocolate in a medium-sized heatproof bowl.
  2. Set aside.
  3. Heat the cream and butter in a saucepan over medium heat 
  4. Bring to a boil.
  5. Immediately pour the boiling cream over the chocolate and allow it to cool for a few minutes.
  6. Stir until smooth, then let stand at room temperature until the mixture is cooled and becomes thick 
  7. Stir in walnuts and coconut flakes
  8. Spread the mixture over the top of the cake
  9. Allow it to set before cutting.
