Ingredients:
3/4 cup granulated sugar
1/2 cup packed brown sugar
One cup butter or margarine softened
One teaspoon baking soda
One teaspoon ground cinnamon
1/2 teaspoon salt
1 1/2 teaspoons vanilla
Two eggs
Three cups of old-fashioned oats. If you don’t have old fashion, quick oats)
1 1/2 cups white whole wheat flour
One cup raisins, dried cherries, or dried blueberries
Directions:
- Heat oven to 350°F. Line cookie sheet with Parchment Paper; set aside. In a large bowl, beat all ingredients except oats, flour, and raisins with an electric mixer on medium speed until well blended, or mix with a spoon. Stir in oats, flour, and raisins.
- On a lined cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart.
- Bake the cookies for 8-13 minutes or until light brown. Cool for 2 minutes; remove from cookie sheets. Cool completely; store tightly covered.
