Simple pineapple cake with crunchy granola topping


Ingredients:

  • Two cups all-purpose flour
  • 1 1/2 cups granulated sugar or brown
  • Three eggs 
  • 2 teaspoons baking soda
  • 1 teaspoon vanilla extract
  • 1 cup pineapple juice
  • 1/2 cup butter
  • 1/3 cup buttermilk
  • 1 teaspoon vanilla extract

Direction:

  1. Preheat oven to 350 degrees, and grease a 9×13 baking pan.
  2. In a large bowl, combine flour, buttermilk, and baking soda. Set aside. 
  3.  In another bowl, cream eggs and sugar.
  4.  Add vanilla and pineapple Juice.
  5. Mix well until smooth.
  6. Combine flour and egg mixtures. Mix until well combine.
  7. Pour batter in prepared pan and sprinkle with crunchy granola.
  8. Bake the cake for 45 minutes, or until a toothpick inserted into the cake, comes out clean.
