Banana Chocolate Chip Muffins


Aunt Betsy’s Banana Chocolate chip muffins

Ingredients:

  1. 1 1/2 cups all-purpose flour
  2. one teaspoon baking soda
  3. 1/2 teaspoon salt
  4. 1/2 cup unsalted butter (at room temp)
  5. 1/2 granulated sugar
  6. 3/4 packed brown sugar
  7. 1/2 cup vegetable oil
  8. 1/2 milk
  9. One teaspoon vanilla extract 
  10. One teaspoon cinnamon powder
  11. Two over-ripe bananas (slightly mashed)
  12. one cup quick oats
  13. 3/4 cup semisweet chocolate chips

Directions:

Set your oven to 350 degrees Fahrenheit and allow it to preheat. While your oven preheats, prepare a 12 count muffin pan with paper cups. Or with a non-stick baking spray. Set aside. Next, whisk flour, baking soda, salt, and cinnamon powder in a medium-large bowl.

Then, beat the sugars, butter, and vegetable oil in a large bowl for three minutes with a hand mixer. Or you may use a stand mixer. Next, stir in the milk, vanilla extract, and the mashed ripe bananas. Then, add the dry ingredients to the sugar mixture. Flour first, followed by the oats and the chocolate chips. Mix well. If the batter gets too thick, you may add a little more milk.

Next, fill your muffin cups to the top with batter and bake for 15 minutes. Once you have reached the 15-minute mark, turn the oven off, but leave muffins in the oven for another 2-3 minutes. Allow muffins to cool before removing them from the pan.
