









Ingredients:
- 2 cups pitted dried plums
- 2 1/2 cups flour
- One teaspoon cinnamon spice
- One teaspoon grated nutmeg
- Two teaspoons baking powder
- One teaspoon baking soda
- 1/8 teaspoon salt
- 3/4 cup butter, softened
- One cup firmly packed brown sugar (granulated sugar is fine)
- Two eggs
- One cup plain yogurt
Directions:
Preheat oven to 350°F. Place plums in a small saucepan, and add water until the plums are just covered. Bring to a boil on medium heat. Allow the plums to cool. Then drain, and place them in a food processor or a blender. Process until just smooth-Set aside.
Whisk flour, salt, spices, baking powder, and baking soda in a medium bowl. Set aside. Beat butter and sugar in a large bowl with an electric mixer on medium speed until light and fluffy. Beat in eggs, one at a time. Beat in the yogurt and plum mixture until well combined. Slowly beat in the flour mixture at low speed until just combined.
Pour batter into greased 13×9-inch baking pan.
Bake the batter for approximately 40 minutes or until a toothpick inserted in the center, comes out clean. Cool in pan on wire rack.
