Southern Sweet Potato Quick Bread

Have one slice of this moist quick bread, and you’ll have a tough time believing how good and luscious it is. Plus, once you have all your ingredients ready, you can whip up this sweet potato quick bread recipe in no time

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • One teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil
  • Two tablespoons milk
  • Two eggs, slightly beaten
  • 1 cup mashed cooked sweet potatoes
  • 1 cup chopped pecans
  • 1/2 cup golden raisins

Directions

Heat oven to 350°F. And grease the bottom of an 8×4-inch loaf pan with shortening or cooking spray or parchment paper.

Then, using a large bowl, combine flour, sugar, nutmeg powder, salt, and cinnamon powder, or any other spice of your choosing.

Then, add oil, milk, and eggs; blend well.

Stir in sweet potatoes, pecans, and raisins-mix well. Then, pour batter into prepared pan.

Bake batter for 1 hour 15 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 15 minutes.

Remove from pan to cooling rack. Cool completely, about 1 hour before serving.
