Southern Sweet Potato Quick Bread

Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- One teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup vegetable oil
- Two tablespoons milk
- Two eggs, slightly beaten
- 1 cup mashed cooked sweet potatoes
- 1 cup chopped pecans
- 1/2 cup golden raisins









Directions
Heat oven to 350°F. And grease the bottom of an 8×4-inch loaf pan with shortening or cooking spray or parchment paper.
Then, using a large bowl, combine flour, sugar, nutmeg powder, salt, and cinnamon powder, or any other spice of your choosing.
Then, add oil, milk, and eggs; blend well.
Stir in sweet potatoes, pecans, and raisins-mix well. Then, pour batter into prepared pan.
Bake batter for 1 hour 15 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 15 minutes.
Remove from pan to cooling rack. Cool completely, about 1 hour before serving.
