Ingredients
- 1/2 cup olive oil
- 1 cup sugar
- 2 large eggs
- 1 1/2 cups unbleached all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 1 teaspoon powdered nutmeg
- 1 cup mashed very ripe bananas
- 1 teaspoon pure vanilla extract
- 1/2 cup chopped walnuts or pecans
Directions
Preheat oven to 350 degrees. Prepare a 9-by-5-by-3-inch loaf pan and set it aside. Use an electric mixer fitted with the paddle attachment, beat olive oil, eggs, and sugar until light and fluffy.







Whisk together the flour and the baking soda, and salt in a medium bowl.
Then add the flour mixture to the butter mixture. Mix until just combined. Next, add the mashed bananas, sour cream, and vanilla. Mix until combined. Then, stir in the nuts and pour the batter into the prepared pan.
Bake until the bread is golden brown or when a cake tester inserted into the center comes out clean (about 70 minutes). Let the bread remain in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
